Ingredients:

1 tablespoon olive oil 1 white onion, diced 3 cloves garlic, minced 4 cups chicken broth 1 can (15 oz) black beans, rinsed and drained 1 can (15 oz) diced tomatoes 1 cup frozen corn Salt and pepper, to taste Optional toppings: Shredded cheese, sour cream, chopped green onions Instructions: 1. Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.2. Add the chicken broth, black beans, tomatoes, corn, salt and pepper to the pot. Bring to a simmer and cook until heated through, about 10 minutes.3. Serve topped with shredded cheese, sour cream or chopped green onions if desired. Enjoy!

A few months ago, my neighbor brought over a big bag of asparagus from her garden. She said I could have as much as I wanted, so of course I took her up on the offer! A few days later, I was looking for something different to make for lunch and came across a recipe for Asparagus Soup. It sounded so good that I decided to give it a try.

The soup turned out to be delicious! Not only does it taste great, but it's also really healthy for you. Asparagus is packed with vitamins and minerals, including Vitamins A, C, and E, folate, and potassium. A perfect meal for a chilly day!

One of the best things about living in a temperate climate is that there are so many delicious meals you can enjoy all year round. And on a chilly day, there's nothing quite like a big pot of soup to warm you up from the inside out!

Today, we're going to show you how to make an easy and hearty vegetable soup that's perfect for autumn days. Let's get started!

Ingredients:

-1 large onion, diced -2 cloves of garlic, minced -1 leek, sliced thin -3 carrots, peeled and diced -2 stalks of celery, diced -1 potato, peeled and diced -1 bay leaf -4 cups vegetable broth -1 cup white wine or water -1 (15 oz) can chickpeas, drained and rinsed -1 cup frozen green peas -1 tablespoon fresh thyme leaves OR 1 teaspoon dried thyme leaves -sea salt and freshly ground black pepper to taste optional toppings: croutons, Parmesan cheese cheese shavings, crispy bacon bits

Instructions:

 In a large stockpot over medium heat, sauté onions and garlic in olive oil until softened. Add leeks, carrots, celery, potato and bay leaf. Sauté for 2 more minutes. Pour in vegetable broth and white wine or water. Bring to a boil then reduce heat to low and simmer for 30 minutes.   Remove pot from heat and discard bay leaf. Using an immersion blender , blend soup until smooth. Alternatively, you can carefully pour soup into a blender pitcher in batches and blend until smooth.   Stir in chickpeas, green peas and thyme leaves. Season with salt and pepper to taste then ladle soup into serving bowls. Top with croutons , Parmesan cheese cheese shavings and crispy bacon bits if desired. Enjoy!

  • 1 butternut squash, peeled and cubed

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 3 cups chicken or vegetable stock

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon cayenne pepper

  • ¼ teaspoon ground ginger

Instructions:

  1. In a large soup pot over medium heat, sauté the butternut squash, onion, and garlic in the stock until the vegetables are soft.2. Add the salt, black pepper, cayenne pepper, and ginger and simmer for another 10 minutes.3. Serve hot with some fresh bread on the side. Enjoy!

Soup with asparagus? Yes please!

Spring has sprung and that means one thing - asparagus is in season! This delicious, healthy vegetable is perfect for a spring soup.

Ingredients: 1 lb. of fresh asparagus 1 onion, chopped 2 cloves of garlic, minced 3 cups of chicken or vegetable stock 1/2 cup of milk salt and pepper to taste

Instructions: 1. Cut the tough ends off the asparagus and discard them. Chop the rest of the asparagus into 1-inch pieces. 2. In a large pot, sauté the onions and garlic in olive oil until they are soft. 3. Add the stock and asparagus to the pot and bring to a boil. 4. Reduce heat and simmer for 10 minutes. 5. Add milk and salt and pepper to taste. Serve hot with some crusty bread on the side for dipping!
