There is no better time than the early days of spring to enjoy a delicious and healthy soup. This asparagus soup recipe is perfect for warming up on a chilly day, or enjoyed chilled on a hot day.

Ingredients: 1 pound fresh asparagus, trimmed and cut into 1-inch pieces 1 large onion, chopped 3 cloves garlic, minced 4 cups vegetable broth 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup plain yogurt 1 tablespoon fresh lemon juice Instructions:

Put asparagus, onion, garlic, broth, salt and pepper in a large saucepan over medium heat. Bring to a boil. Reduce heat; simmer for 10 minutes or until vegetables are tender. Cool slightly.   Puree mixture in batches in a food processor or blender until smooth. Return to pan. Stir in yogurt and lemon juice. Heat through (do not boil). Ladle soup into bowls; serve warm or chilled.

1/2 cup butter 1 large onion, chopped 3 cloves garlic, minced 6 cups chicken broth 2 pounds asparagus, trimmed and cut into 1" pieces 1 cup milk 1/4 cup flour salt and pepper to taste grated Parmesan cheese for serving Instructions: Melt the butter in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken broth and asparagus and bring to a boil. Reduce the heat to low and simmer for 10 minutes. Mash some of the asparagus with a fork or immersion blender to thicken the soup. In a small bowl, whisk together the milk and flour until smooth. Add to the soup and cook until thickened, about 5 minutes. Season with salt and pepper to taste. Serve with Parmesan cheese sprinkled on top.

Ingredients: 1 cup chopped onion 3 cloves garlic, minced 4 cups chicken stock 2 bunches of asparagus, trimmed and cut into 1" pieces 1/2 teaspoon dried thyme 1/4 teaspoon freshly ground black pepper 1/2 cup heavy cream Salt to taste Optional toppings: crumbled bacon, shredded cheese, chopped fresh parsley Instructions: 1. In a large slow cooker, combine the onion, garlic, chicken stock, asparagus, thyme and black pepper. 2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the asparagus is very tender. 3. Remove the insert from the slow cooker and let cool slightly. Use an immersion blender or stand blender to puree the soup until completely smooth. 4. Stir in the cream and salt to taste. Serve warm with optional toppings.
