Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the asparagus and stock and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Remove from heat and let cool slightly. Use an immersion blenderor regular blender to blend until smooth. If using a regular blender, transfer soup to a Blender jar and blend until smooth. Be careful not to blend too long or the soup will turn foamy.
  4. Pour the soup back into the pot or Dutch oven and stir in the milk. Season with salt and pepper to taste. Serve warm with shredded cheese, chopped fresh herbs, and crumbled bacon (if desired).
